The WHO recently reported that more than 3 billion people in the world are malnourished. The world food supply, especially cereal grains, has been declining for about 20 years, and the world population has now risen to 6.3 billion. Currently more than 90 per cent of the world’s food supply comes from just 15 crop species and 8 species of livestock. One way of increasing the food supply is to increase the diversity of plant and animal species used as food. This book looks into the use of a wide variety of small animals, insects, frogs and snails that are used as food. The authors, from their experiences from all over the world, provide an overview of the areas in which mini-livestock has been a relevant resource or is currently considered as a key base for protein, fat, minerals and vitamins. |
