This all-inclusive book covers preharvest and postharvest food safety issues, including a wide range of food safety-related research. The major pathogens associated with meat, poultry, produce, and other foods are discussed. The 32 chapters are divided into six sections: pathogen/host interactions; ecology, distribution and the spread of foodborne hazards; antimicrobial resistance; verification tests; decontamination and prevention strategies; and risk analysis. Each of the authors, from academia, government and industry, not only reviews their own area of research, but also provides insights into important as-yet unanswered questions, newly-advanced theories, and future directions in their area of research. |
