Review: This is the report and recommendations of the Committee of Experts on Nutrition, Food Safety and Consumer Protection of the Council of Europe. Its aim was: to review the current practice in Europe regarding hospital food provision and to highlight deficiencies in the current food services practices; to issue recommendations; and to consider how politicians, hospital managers, food service and health care professionals could work together to improve the nutritional care and support of patients. It recommends that staff should have clearly-defined responsibilities; that the level of their education should be improved; that patients should be involved in the planning of their meals; that the hospital staff should give a priority to co-operation; and that hospital management should acknowledge responsibility for the food service.
