These are the proceedings of the conference Functional Foods 2000, held in the Netherlands in March 2000. The 44 papers were divided into ten sessions that addressed specific health areas: cardiovascular disease; cancer; bone health; gut health; immune function; oral health and performance. The last session looked at the future scenario in Europe. Functional foods begun in Japan in the 1980s, but are now seen in the West as the third generation of healthy foods. First-generation products of the mid-1970s included fruit juice and wholemeal bread; second-generation 'low and lite' products emerged in the 1980s and functional foods (FFs) are third-generation products. These FFs improve health by influencing specified physiological functions in our body. They must be safe and must be proved to have the required effects when consumed in amounts that they would normally be consumed in a diet. |
