This book covers the technical aspects of food additives. It aims to shed some light on the reasons for adding additive in prepared foods. It begins by explaining what food additives are and why they are used and goes on to give basic guidelines as to what should be on a label – as outlined in the Food labelling Regulations. The objective on EU food additives legislation is to protect public health. Chapter 3 looks at the mechanisms that are in place to ensure that food additives are covered by EU legislation. Foodstuffs are now sold world-wide, and legislation can vary from country to country; Chapter 4 discusses legislation in countries outside the EU – North America, Japan, other Far Eastern countries, the Middle East, Australia and New Zealand. The bulk of the book contains a list of additives, E100 to E1518, their sources, functions, benefits, limitations, and typical products in which they may be found. |
